SWEET POTATO, CHICKEN, AND QUINOA SOUP .
We are approaching winter, and soups become a weekly staple in the Grootenboer household. I will be sharing easy and healthy recipes that my husband and I love and make on a regular basis. This is a recipe that we just tried out for the first time and are in love. So I just had to share it with you all! It is so simple, healthy, AND you just throw everything into a slow cooker. Seriously, slow cooker is the way to go, we use our slow cooker at least twice a week. What's not to love about dumping all of the ingredients into a big pot and letting it cook for a few hours and when you are home from work or ready to eat, boom, it is ready for you and is always packed with so much flavour!
INGREDIENTS
1 medium onion, chopped
3 garlic cloves, minced
2 skinless and boneless chicken breasts
1 medium sweet potato
14oz diced tomatoes
6 cups of chicken broth
1 tsp of bay leaves
2 tsp of dried parsley
1 tsp of red pepper flakes
1 tsp of salt
1 tsp of ground pepper
3/4 cup of quinoa
INSTRUCTIONS
1. Throw all of the ingredients into the slow cooker and cook on low from 4-6 hours on low. Enjoy!
