THAI RED CURRY SOUP
YOU GUYS ARE GOING TO THANK ME FOR THIS RECIPE. IT IS ABSOLUTELY DELICIOUS, AND SO SIMPLE TO MAKE, AND THE BEST PART, IT IS HEALTHY!
Ingredients:
2-4 DICED CHICKEN BREASTS
2 SWEET POTATOES - DICED
1 RED BELL PEPPER - DICED
1 BUNCH OF KALE - DICED AND WITH NO STEMS
1 WHITE ONION - DICED
4 OZ RED CURRY PASTE
1 TBSP COCONUT OIL
1 CAN FULL FAT COCONUT MILK
1 1/2 CUPS OF CHICKEN BROTH
1 TSP SEA SALT
1 TBSP HOT SAUCE
HEAT COCNUT OIL OVER MEDIUM HEAT IN BIG SOUP POT. ADD CURRY PASTE, SAUTE FOR 1 MINUTE. ADD THE ONION, PEPPER AND SAUTE FOR 4 MINUTES. ADD COOKED CHICKEN, COOK FOR ANOTHER 3 MINUTES. ADD THE COCONUT MILK, BROTH, KALE, SALT, SWEET POTATOES AND HOT SAUCE. BRING TO A BOIL, REDUCE HEAT, COVER AND SIMMER FOR 20 MINUTES. TOP WITH AVOCADO AND LIME IF YOU WOULD LIKE, ENJOY!
